In the New Year's articles of this series, we have already written a lot about what dishes to prepare for the holiday table. But the main focus has always been on meat, poultry and fish in all forms. But at the same time, we forgot that there is a certain percentage of people who do not eat such food in principle, and it is difficult to hope that they will make an exception for the New Year.

Respecting their tastes and traditions, today we have prepared a vegetarian menu for the New Year. And don’t let meat-eaters imagine a meager meal consisting of a pile of cabbage and a few pieces of boiled carrots. Vegetarian dishes for the New Year, prepared without the use of animal products, can be even tastier and more varied, the main thing is to show your imagination.

Let’s immediately agree that we are talking about vegetarianism, in which not all animal products are prohibited, but only flesh. That is, we can easily use milk, eggs, sour cream, etc.

Snacks




The vegetarian New Year's table will begin, as always, with appetizers. Nobody canceled the small ones sandwiches for one bite. As a basis, you can take already proven recipes: avocado mousse with lime juice and hot pepper, beet puree with garlic and natural yogurt, a variety of vegetable caviar (squash, eggplant and any other to taste).




In the same way, vegetarians will not refuse stuffed eggs, in which many traditional types are suitable as a filling: mushrooms fried with onions, grated raw carrots with garlic and melted cheese, and so on.




Also, you don’t need to ignore the variety of traditional vegetarian recipes for the New Year of Russian cuisine: sauerkraut, a variety of vegetables, soaked apples, and so on. They will not only add variety to the table, but will also make all guests remember their roots.




Even traditional herring under a fur coat can, after a little modernization, take its place on the vegetarian table. For it you will need potatoes, carrots, beets, processed (or Adyghe) cheese, seaweed, walnuts and mayonnaise. The salad is laid out in layers as usual, with each layer coated with mayonnaise. But, taking into account the absence of herring, the sequence looks like this: potatoes, seaweed, cheese, carrots, beets, mixed with crushed nuts. The layers can be repeated, then the salad will become even more interesting.

Main course




As a main dish on a vegetarian New Year's table, you can prepare vegetable skewers in batter . For them, you need to prepare the batter in advance according to your favorite recipe (for example, water, kefir, flour, salt and spices) and cut vegetables into small portions: zucchini, eggplant, bell peppers, tomatoes and Adyghe cheese. Everything except cheese and tomatoes should be mixed, sprinkled with spices and salt and left for half an hour to soak. You need to string all the ingredients onto bamboo sticks, dip them in batter on all sides and fry in olive or sunflower oil (there should be quite a lot of it, a layer of 2-3 centimeters). Fry the kebab on both sides under a closed lid for 6-8 minutes. When it is cooked, you need to place it on a layer of napkins or paper towels so that they absorb excess oil.

Dessert

In principle, most desserts already comply with the principles of vegetarian cooking (it is very difficult to imagine a cake with meat). The only exception is food gelatin, which is made from animal cartilage tissue, which means it is prohibited. But if you still want to pamper yourself and your guests with such a dish, then you can use agar-agar, for the production of which special algae is used.




But as an example of a wonderful New Year's dessert that both vegetarians and meat-eaters will enjoy, we can cite baked apples. To prepare them, you need to select several beautiful red apples of the same size, cut out the middle of them and fill the free space with a mixture of butter, sugar and cinnamon. Then each apple must be wrapped in foil or special film and steamed or in the oven until soft. The dessert can be decorated with a cinnamon stick and caramel.

This fairly simple menu does not contain anything forbidden for a vegetarian, but it will suit everyone else’s tastes. Perhaps after such a dinner they will even think about changing their culinary orientation.

In small steps, day by day, the main, most anticipated event of the outgoing year is approaching - New Year 2017! We all spent this time differently, some can confidently say that the year was not in vain: when important goals and wildest dreams came true, and for some, the same plans, with new hope, were carried forward to the next year . However, regardless of the recent past, everyone wants to enter a new life in the same way: interesting, bright, fun, surrounded by beloved friends or family, at home or perhaps traveling, but most importantly - in peace of mind, with a feeling of happiness and anticipation real miracles in the new year.

And in order for the celebration not to be boring, you need to think about not only the location (and the list of guests), but also the New Year's menu! We have made sure that your table in the year of the Fire Rooster is truly bright, lush and elegant and, of course, delicious! Also, when compiling the list of dishes, two important criteria were taken into account: the availability of vegetarian ingredients and lightness and ease of preparation. Holiday salads without meat

Taiga

The combination of vegetables and berries makes the taste colorful. And this dish looks very elegant.

Ingredients:

  • Potatoes – 3 pcs.;
  • Mushrooms (marinated) – 0.5 l;
  • Carrots – 2 pcs. (average);
  • Peas (canned) – 150g;
  • Cranberries or lingonberries (fresh or frozen) – 1 tbsp.;
  • Green onions and herbs (dill and parsley) - a bunch each;
  • Vegetable oil – 30ml;
  • Salt pepper.

How to cook:

  • Boil carrots and potatoes in their skins.
  • Peel the potatoes and cut into cubes.
  • Chop the mushrooms.

It is very important to choose the right mushroom cut. If you want the flavor of this ingredient to dominate, you should cut the mushrooms in half.

The general rule for salads is to cut the same pieces for all ingredients.

  • Cut the boiled carrots, like potatoes, into cubes.
  • Wash the onions and greens and cut them.
  • Combine all products. Salt and pepper. Mix.

Add oil and mix again.

This dish does not require additional decoration. Maybe leave some berries and sprinkle them on top of the salad.

fly agaric

It’s interesting that almost all the products in this recipe are already prepared: salted, pickled.

Ingredients:

  • Honey mushrooms (salted – 500g;
  • Corn (canned) – 400g;
  • Korean carrots – 100g;
  • White beans (canned) – 400g;
  • Tomatoes (small, maybe cherry) – 200g;
  • Vegetable oil – 1-1.5 tbsp;
  • Salt;
  • Parsley or lettuce for decoration.

How to cook:

  • Drain water from canned foods.
  • Wash and chop the mushrooms.
  • Cut the carrots into 4-5 cm pieces.
  • Combine all ingredients.
  • Be sure to taste before adding salt. All products are already salted. Perhaps there is no need to add salt to them.
  • Season with oil. Mix.
  • Garnish with tomato halves and lettuce leaves on top. You can make small dots on the “fly agaric caps” from white peppercorns.

An elegant dish that can be prepared in 10-15 minutes.

Avocado + orange

An unusual dish that is relevant for the New Year!

Ingredients:

  • Orange – 2 pcs.;
  • Avocado – 1 pc.;
  • Salad (“Frise”) – approx. 7 leaves (to taste);
  • Bread – 2 pieces;
  • Garlic – 2 teeth;
  • Olive oil – 3 tbsp;
  • Wine vinegar – 2 tbsp;
  • Salt pepper.

Preparation:

  • Peel the oranges. Remove the film. Cut the slice in half.
  • Dry the bread in the oven or toaster. Before slicing, grate with garlic.
  • Make the sauce: combine oil and vinegar. Salt and pepper.
  • Wash and tear the salad. Place a layer on a plate.
  • The next layer is avocado. It can be cut. You can also break off small pieces with a spoon.
  • Then a layer of orange slices.
  • The top layer is bread.
  • Just before serving, pour over the sauce.

You can prepare the dish without bread. Focus on your taste and preferences.

Olivier with soy meat

Ingredients:

  • boiled potatoes in their jackets, medium size - 6-7 pcs.
  • boiled carrots, medium size - 3 pcs.
  • peas - 1 can 0.5 l.
  • small pickled cucumbers - 5 pcs.
  • smoked cheese - 100 gr.
  • Lenten maonnaise - to taste
  • black salt - 1 tsp.
  • dry soy goulash - 200 gr.

Seasonings for soy:

  • asafoetida - 3/4 tsp.
  • seasoning for meat - 1 tsp.
  • ground coriander - 1 tsp.
  • paprika - 0.5 tsp.
  • salt - 1 tsp. when cooking, 3/4 tsp. after
  • vegetable oil - 4-5 tbsp.

Boil the soy goulash, cut into cubes, add spices, mix

Place in a frying pan and fry the soy goulash in vegetable oil until cooked.

Cut the boiled vegetables into cubes.

Smoked cheese finely chopped

Place everything in a bowl, add spices, mayonnaise and mix.

Olivier with mushrooms

INGREDIENTS:

  • Potatoes 4 pieces
  • Pickled cucumbers 4 pieces
  • Carrot 1 piece
  • 1 can canned green peas
  • Onion 1 head
  • Mayonnaise 150 g
  • Fresh champignons 200 g

Preparation:

  1. Cut the boiled potatoes and carrots into cubes. Cut pickled cucumbers and vegetables into cubes.
  2. Chop the onions and champignons and fry together until golden brown in vegetable oil.
  3. Combine vegetables with mushrooms and onions (drain the oil), add mayonnaise, spices and mix.

Vegetarian fur coat from Marmalade Fox

For the vegetarian salad, we will need:

  • 1 eggplant (or 300g champignons)
  • 1/2 purple onion (any onion can be used)
  • sugar (honey)
  • vinegar (if you fry onions with eggplants, then you don’t need to marinate them)
  • frying oil
  • soy sauce
  • nori seaweed - 3 sheets
  • potatoes - 3 pcs (medium)
  • carrots - 3 pcs (medium)
  • beets - 2 pieces (small)
  • homemade mayonnaise - about 400g

Festive vegetable salad

Salad of fresh cabbage, cucumbers and tomatoes. A classic vegetable salad, but made in layers and therefore claims to be on the holiday table.

Ingredients:

  • 200 g cabbage
  • 2-3 tomatoes
  • 2-3 cucumbers
  • 1 bell pepper
  • half a bunch of dill
  • half a bunch of green onions
  • 2 tbsp. mayonnaise
  • black pepper

Simple and delicious salad with avocado - new

A very hearty, spicy salad with beans, corn and avocado, ready in 10 minutes. It looks festive and bright.

Ingredients:

  • Canned beans 1 can
  • Canned corn 1 can
  • Avocado (ripe) 1 pc. (400 g)
  • Tomatoes 200 g
  • Red onion 120 g
  • Chili pepper 1 pc. (taste)
  • Cilantro bunch

Salad dressing:

  • Lemon (lime) juice 3 tbsp.
  • Olive oil 3 tbsp.
  • Garlic 2 cloves
  • Sugar 1 tbsp.
  • Salt 1 tsp (to taste)
  • Black pepper ½ tsp. (taste)

We are preparing the dressing. Squeeze lemon juice, garlic into the oil, add sugar, salt and pepper.

Cut the tomatoes into quarters. Thinly slice the onion.

Add finely chopped chili peppers, greens, and diced avocado to the salad.

Add beans and corn. Mix the oil dressing again and pour it into the satat. Mix carefully. You can garnish with a slice of lemon.
Very tasty, filling and colorful salad!

Ratatouille

Not quite a salad, but quite an excellent appetizer.

Ratatouille is a traditional Provençal dish. A simple step-by-step recipe will help you make this incredibly tasty dish.

Ingredients for the sauce:

  • Tomatoes – 900 gr
  • Pepper – 250 gr
  • Onion – 200 gr
  • Carrots – 200 gr
  • Celery stalk – 100 g
  • Chili pepper – 50 gr
  • Ghee butter – 40 g (can be replaced with butter)
  • Garlic – 2 cloves
  • Provençal herbs – 1 tbsp.
  • Salt – 1 tbsp.
  • Sugar – 1 tbsp.
  • Thyme
  • Basil

Top layer ingredients:

  • Zucchini – 500 gr
  • Eggplants – 500 gr
  • Zucchini – 500 gr
  • Tomatoes – 300 gr
  • Potatoes – 200 gr
  • Onion – 200 gr
  • Sweet pepper red, yellow, green – 150 g (3 pcs)
  • Olive oil – 60 ml
  • Salt – 2 tsp.
  • Thyme

Preparing the sauce:

  1. Make slits in the tomatoes and pour boiling water over them for 10 minutes.
  2. Puree the tomatoes in a blender.
  3. Peel the peppers and place in the oven at 180°C for 20 minutes.
  4. Fry onions, carrots and celery stalks in olive oil. Add ghee.
  5. Pour in tomato puree and add bay leaf.
  6. Peel the peppers, chop and add to the pan.
  7. Add Provençal herbs.
  8. Add garlic and chili pepper.
  9. Cover with a lid and simmer over low heat for 60 minutes, then remove the lid and simmer for another 30 minutes.
  10. Slice the vegetables thinly (3-5 mm). Salt the eggplants and zucchini and cover with water for 20 minutes.
  11. Add thyme and basil, grind the sauce a little with a blender.


  12. Place the sauce in the pan, arrange the vegetables, alternating the order
  13. Add thyme, salt and pepper to olive oil. Drizzle seasoned oil over vegetables.
  14. Cover the pan with foil and place in the oven at 160°C for 90 minutes.
  15. Remove the foil and bake for another 40 minutes.
  16. Serve hot sprinkled with Parmesan and parsley. Bon appetit!

Dessert. Fruit dishes

You can replace baked goods with sweet salads. And if the snacks are being prepared without mayonnaise , then neither cream, nor ice cream, nor fatty creams are added to these desserts. But this does not make the taste of the dish worse. On the contrary, these are healthy and amazingly tasty salads.

Ryzhik

A very bright dessert. And very useful.

Ingredients:

  • Carrots (if you choose a sweet and juicy variety, you won’t have to add a sweetener) – 2 pcs.;
  • Oranges – 2 pcs.;
  • Cashews – 2 tbsp;
  • Lemon juice – 2 tbsp;
  • Oil (olive, flaxseed, sesame or peanut - 1 tbsp;
  • Ground black pepper - a pinch;
  • Sugar – a pinch.

Preparation:

  • Grate the carrots on a coarse grater.
  • Peel the oranges. Cut into pieces and remove membranes.
  • Crush the nuts.
  • Mix all products. Drizzle with oil and juice. Spice up. If necessary, add malt.

Contains pepper. This ingredient makes the taste of the dish very bright and unusual. You can replace it with a pinch of ground coffee.

Fruity explosion

There are a lot of fruits here, which make the dish taste unusual. This mix will definitely be useful and interesting for kids.

Ingredients:

  • Peach (nectarine) – 1 pc.;
  • Plums – 2-3 tbsp;
  • Apples – 1 pc.;
  • Figs – 2 pcs.;
  • Kiwi – 2 pcs.;
  • Tangerines – 2 pcs.;
  • Orange juice;
  • Blueberry jam – berries with syrup;
  • Mint.

Preparation:

  • Cut the peach, plum, apple and pear into cubes.
  • Kiwi - in circles.
  • Figs - in slices.
  • Divide the tangerine into slices.
  • Combine all ingredients.
  • Pour over orange juice.
  • Divide into portions.
  • Add rowan to each serving. Drizzle with syrup.
  • Decorate.

Of course, here any fruits and berries are easily replaceable. And the jam can be replaced with berries from which the juice has been squeezed. It will turn out juicy and tasty!

It’s hard to imagine our New Year holiday traditions without a feast, which is often both unhealthy and not environmentally friendly. Most people cannot imagine a New Year's table without meat and fish dishes. But do vegetarians really not celebrate the New Year or do it with a modest “ordinary” menu? Of course not! From our selection you will learn about wonderful dishes that will make your table healthy and at the same time surprise your guests.

Many recipes are taken from the diet of lacto- and ovo-vegetarians, but some are also suitable for vegans.

1. Vegetarian “meat”

This dish is made from seitan, a plant-based meat substitute that tastes very similar to the “original”. Seitan is made from flour. The dough is thoroughly washed to remove the starch from it, and the remaining gluten is boiled in broth. The result is a mass with a high protein content and a taste similar to meat.

  • Ingredients: 3.5 cups flour, 1.5 cups water. The dough is made from this. And for the broth you need 1 liter of water and spices to taste.

The resulting “meat” can be used in any recipes as a substitute for natural meat. In particular, you can cook fried meat. To do this, seitan cut into pieces is fried in a frying pan in butter with the addition of spices: turmeric, coriander, bay leaf, pepper and soy sauce. First, spices are added to the oil. Followed by soy sauce and only then “meat”. You need to fry it for 5-7 minutes on all sides.

2. Fish

A vegetarian fish substitute is made from cheese, for example, Adyghe cheese.

  • Ingredients: 150 grams of cheese (Adyghe, paneer or tofu), 100 ml of water, 3 tablespoons of flour, half a teaspoon of each type of spice: salt, black pepper and turmeric, vegetable oil and several sheets of nori seaweed.

Cut the cheese into rectangular pieces. Prepare a sklar from water, flour and spices. Soften the nori in water and wrap it around the cheese, and then dip the resulting “rolls” into the sklar. Next, fry the fish on both sides.

3. Aspic

It’s hard to imagine a New Year’s table without this dish. It is also available for vegetarians. Of course, without tongue and other animal products. They are replaced by cheese. And again, nori seaweed turns out to be very appropriate.

  • Ingredients: 1 large carrot, 1 potato, 500 ml water, 1 teaspoon ghee (can be replaced with ghee), 2-3 tablespoons sour cream, 2 teaspoons agar-agar, 50 grams of Adyghe cheese and a set of spices, which may vary depending on your tastes. For example, this set: allspice, red pepper, coriander, cloves, bay leaves and such exotic spices as suneli hops and asafoetida, which will be very difficult to find here. But you can do without them, because spices are added to taste; you don’t always need to strictly follow the recipe.

Boil vegetables in water, adding spices, and a little later - nori sheet and ghee. Soak agar-agar in a small amount of water. Remove vegetables from the prepared broth and strain the broth. Pour the swollen agar-agar into the broth and bring to a boil, stirring. Cool. Stir a third of the broth with chilled sour cream until smooth. Chop the vegetables and place them on top of the frozen sour cream mixture. After this, carefully pour the remaining broth on top and wait until the dish hardens.

4. Cheese lasagna

  • Ingredients: package of lasagna sheets, 50 grams of mozzarella, 300 grams of Almette cheese, 300 grams of Parmesan (or any hard cheese), 250 grams of cream cheese, cream (20% fat), nutmeg and salt.

Cook the lasagne sheets for 3 minutes. Then grease a baking dish with butter and place the chopped soft cheese on it. Next, layer your ingredients in the following order: lasagna sheets, cream cheese, lasagna sheets, cream cheese and half the mozzarella, lasagna sheets, cream cheese, lasagna sheets, rest of the mozzarella and more lasagne sheets. Top it all with cream and sprinkle with nutmeg and Parmesan.

Bake in foil for 30-40 minutes. Temperature – 180 degrees. Then you need to remove the foil and bake for another 10 minutes. And that’s it – another delicious dish is ready for your New Year’s table!

5. Vegetarian “herring” under a fur coat

This dish is simply classic for our holiday tables. What is included in its vegetarian option?

  • Ingredients: 800 grams of potatoes, beets and carrots, 350 grams of seaweed, 300 grams of Adyghe or processed cheese, 5 walnuts, 250 ml of sour cream and 400 ml of mayonnaise, salt and spices (coriander, nutmeg, cinnamon, black pepper and asafoetida).

Boil vegetables in their uniforms. Then peel and grate. Also grate the cheese. What will replace herring, you ask? Sea kale, which needs to be finely chopped. Add two tablespoons of sour cream to carrots and beets, and 3-4 tablespoons to potatoes. Then add spices to taste. And pour crushed walnuts into the beets.

After this, lay out the layers “under the fur coat” in the following order: potatoes, seaweed, cheese, carrots, beets. Lubricate each layer with mayonnaise and repeat the entire set of layers one more time. The dish is ready!

6. Olivier salad

It’s almost impossible to imagine a New Year’s layer without Olivier. Actually, the vegetarian version of this salad is distinguished only by the absence of sausage.

  • Ingredients: 1 kilogram of potatoes, half a kilogram of carrots, a can of canned peas, 100-150 grams of cheese, several cucumbers, a glass of mayonnaise and a glass of sour cream, turmeric, asafoetida, black pepper and salt, olives and seaweed.

Boil the vegetables in their jackets, peel and cut into cubes. Chop the remaining ingredients. Mix everything and add mayonnaise and spices.

7. Baked Potatoes

It’s hardly worth talking about the place of potatoes on the New Year’s table of Belarusians. But you don’t have to limit yourself to stewed or boiled potatoes. Its baked version will be much tastier and healthier.

  • Ingredients: kilogram of potatoes, 400 ml of sour cream, 400 grams of cheese, 50 ml of vegetable oil, salt and spices (turmeric, black pepper and coriander).

Cut the peeled potatoes into slices, mix sour cream with 1 teaspoon of turmeric. Place a third of the potatoes on a greased baking sheet and sprinkle with spices. Place a layer of cheese on top (also a third of the total amount) and top with sour cream and butter. Make two more similar layers of potatoes, cheese and sour cream.

Bake for 15 minutes in the oven, covered, at 250 degrees, then another 40 minutes at 200 degrees. 10 minutes before cooking, remove the lid. This will give a golden brown crust on top of the dish.

8. Shah-pilaf

This dish will stand out on your table, and it's safe to say that your guests will be delighted with it. Shah-pilaf is a traditional Azerbaijani dish that is served only on major holidays.

  • Ingredients: half a kilogram of basmati rice, 150 grams of raisins, dried apricots and cherry plums (or other sour dried fruit), 250 grams of walnuts, 3 carrots, a pack of butter and a package of thin pita bread.

The most important nuance in preparing this dish concerns the type of rice. The main thing is that it is long-grain (basmati is the best variety) and properly cooked. To begin, soak the rice for half an hour in cold water. Next, rinse thoroughly. Cook rice in water with a ratio of 1 to 3 for 3-5 minutes. During cooking, add salt to taste. As a result, the rice should acquire a uniform color, but remain slightly undercooked. Place it in a shallow colander and pour boiling water over it.

Fry the chopped dried fruits in a frying pan using a third of the oil. After a few minutes of frying, add 2 tablespoons of sugar and a little salt to the dried fruits. This will coat the fruit with a layer of sugar, reminiscent of caramel.

Sauté diced carrots in vegetable oil. Also fry the walnuts, broken into pieces, in a frying pan. Cut the pita bread into 5-centimeter strips and melt the rest of the butter.

It is necessary to cook pilaf in a deep bowl. It is greased from the inside with oil and covered with strips of pita bread in 2 layers so that they cover the entire surface of the dish “overlapping” and so that their ends hang down from the dish. Next, rice is laid in a 1 centimeter layer, followed by dried fruits and a layer of ghee. Next again rice, carrots, nuts and butter. Everything ends with the last layer of rice and is wrapped in “tails” of pita bread, which are once again greased with oil on top.

Shah pilaf is prepared in the oven at 200 degrees for 20-30 minutes. The pita bread should be covered with a golden crust.

9. Cake “Bird's milk”

Cream, sour cream, 400 grams of sugar and vanillin must be mixed and stirred with a mixer for 10 minutes until thick and homogeneous. The container with the resulting mass must be placed in a plate or pan with hot water so that the mixture warms up well.

Next, grease the glass form with vegetable oil. Agar-agar should be mixed with milk and the rest of the sugar (50 grams or 3 tablespoons). Over low heat, bring the resulting mixture to a boil, stirring it constantly. The agar-agar should dissolve, after which you need to turn it off and let the mixture stand for 3 minutes. Then beat the mixture of sour cream and cream with a mixer and in the process add a mixture of milk and agar-agar. We put everything in a glass form, level it and put it in the refrigerator.

Mix the glaze ingredients and bring to a boil. Next, after cooling to 50 degrees, pour them on top of the main mass of the cake and wait until the glaze hardens. In an hour, the cake will be ready to slice and eat.

There are a huge number of variations of this dish, and each of them is good in its own way. Here is one recipe for making baklava at home.

  • Ingredients: a glass of milk, 50 ml of sour cream, 60 grams of butter, a quarter spoon of soda and four glasses of flour, some fried walnuts and half a liter of refined oil. For the syrup you will need half a kilo of sugar and 200 ml of water.

Pour melted butter into the milk, add sour cream and soda and knead the dough, adding flour gradually so that it becomes thicker. Leave the covered dough for 10 minutes. Divide it into small pieces or balls, which are then rolled out as thinly as possible on the table, allowing the resulting sheets to dry on each side for 5-10 minutes. Place the sheets one on top, roll them into a roll and cut at an angle of 45 degrees. The edges of the dough should not stick together.

Pour vegetable oil into a deep frying pan and fry the rolls in it until golden brown. Place them on a plate lined with napkins and let cool.

Mix sugar with water and bring to a boil (after this you can add honey to taste). Dip the cooled baklava into the hot syrup for 1 minute. Place on plates and sprinkle with crushed nuts.

  1. Chop the onion into small cubes, cut the mushrooms into small pieces.
