Proper meat, perfect minced meat

The most important thing in preparing the right burger is the beef patty, which is made according to special rules and only from homemade minced meat. Store-bought minced meat is not suitable for this dish, because you do not know what kind of meat it is made from. It’s good if it’s made from marbled beef, in which 80% is meat and 20% is fat. And if not? Therefore, it is better to buy high-quality beef yourself - for example, let two-thirds of the minced meat be lean meat from the shoulder blade and a third from the fattier abdominal part (flank). The upper part of the hind thigh (rump) and the fleshy part near the three outer ribs (rump) are also suitable for the cutlet. These places contain just the right amount of fat! As a last resort, you can add a little pork to lean beef. This, of course, is not a classic, but the proportions will be respected.

Slice the meat along the grain, and then grind it in a meat grinder with a larger attachment. Minced meat should not look like puree, because small grains of meat make it juicy and especially tasty. The less the meat structure is damaged, the better! All you need to do is add salt and black pepper to the minced meat - no more spices or additional products! A cutlet cooked with the addition of soaked buns, eggs, onions and garlic is not a burger. And one more important point - salt the cutlet before frying, and not before, because salt leads to the release of juice and the burger will turn out dry and harsh.

We mold and fry

Cool the minced meat and all tools before forming the cutlets. The fact is that because of the fat they will stick to your hands. It is quite possible that while working with minced meat, you will periodically have to hold your hands under cold water if the meat still sticks to your palms. Once the semi-finished products are ready, place them in the cold again.

The cutlets must be flat and ideal in shape, so it is better to cook them using a special mold, press or cooking ring. Make cutlets keeping in mind that after frying they will shrink in size. If you don't have any utensils, use a suitable sized cup or fish can. The thickness of the cutlet is no more than 1.5 cm. When modeling, make a small hole on the surface of the cutlet, since in a frying pan or grill they will swell a little and will not turn out flat.

Fry the cutlets on the grill or in a hot frying pan in vegetable oil for 5-8 minutes on each side. Do not press them down with a spatula so that the cutlets do not lose their juice. If you like your meat medium rare, 5 minutes is enough, but for deep frying you will need at least 8 minutes. But there is no point in keeping them on the fire longer - the products will become dry and lose their flavor.

Hamburger buns

Soft, tasty and elastic buns can be prepared at home. In this case, you will be sure that there are no preservatives in the dough. The most common option is yeast dough.

Mix a glass of warm milk with a glass of warm water, add 1 tbsp to the liquid. l. sugar and 1 tsp. salt. The water should not be too hot, otherwise the yeast will die and the dough will not rise. You can knead the dough with water, but milk gives it tenderness and creamy flavor.

Now add an 11 gram packet of instant yeast and mix the liquid with 2 tbsp. l. soft butter. Mix well and leave the mixture for 5 minutes until it comes to life and bubbles. Once you see the yeast working, gradually add 5.5 cups of flour using a food processor. This will take you 7-10 minutes.

Cover the container with the dough with a damp towel and leave it alone for an hour. During this time it will increase in volume by approximately 2 times. Divide it into 10-12 parts and form beautiful and smooth balls. To do this, stretch the dough down the ball and pinch it - the surface of the future bun will stretch and become smooth. Now, pressing the buns with your palms, turn the balls into flat cakes 1 cm thick.

Place the buns on a baking tray covered with baking paper and place the dough pieces on it at a distance of at least 3 cm from each other. The fact is that in the oven the products will become more fluffy and therefore may stick together.

Allow the buns to rise a little longer before baking. Brush the surface of each product with egg yolk mixed with 1 tbsp. l. water and sprinkle with sesame seeds. The seeds will not stick to a dry surface, and the yolk will make the buns rosy and appetizing.

The average baking time is 15 minutes at 200°C, but it all depends on the oven, so keep an eye on the buns and, as soon as they acquire a nice golden color, remove them from the oven.

Yeast buns can be stored in the refrigerator for a week in cling film and spoil your beloved family with healthy homemade burgers every day! Some housewives prefer to add eggs to the dough, because then the buns hold their shape better, although they last much less.

Final assembly of the burger

For a snack, you will need any bun - not too sweet, not too crispy, elastic, soft enough and not dry. Now supermarkets sell special burger buns sprinkled with sesame seeds. These are ideal, although buns with poppy seeds, nuts or seeds are also very tasty.

The fact is that my great-nephews came to see me - a boy and... a boy, and another boy. To the question “What should I cook for you?” they said in one voice: “Hamburgers!” I had to cook. And, in my opinion, I did it, although I didn’t have fresh tomatoes on the farm, but unripe persimmons played the role of tomatoes perfectly. And instead of a thin sheet of yellow hard cheese, I had to use soft goat cheese. Total compromises! But it turned out delicious - people approved.

The secret to flat, even patties also turned out to be simple: hamburger patties are made from mixed minced meat (80% beef, 20% pork) with salt and pepper. That's all! No more additives. This solid meat cutlet perfectly holds any shape – including the shape of a flat cake.

To cook hamburgers at home, you need:

  • minced pork and beef – 300 g;
  • homemade round buns – 3 pcs.;
  • onion – 1 pc.;
  • tomato (I have persimmon) – 1 pc.;
  • hard Russian cheese – 3 thin slices;
  • mayonnaise – 3 teaspoons;
  • mustard – 1 teaspoon;
  • ketchup – 3 teaspoons;
  • lettuce leaves – 3 pcs.;

Heat a cast iron skillet with oil over medium heat. While it is heating, peel the onion and cut into thick slices - you need to get 6 slices.

Fry the onion for about 3-4 minutes, until soft, then turn over, trying to prevent the circles from falling apart, and fry on the other side.

When the onion is fried, remove it to a plate and place the cutlets in the frying pan. We use the frequent turning method: turn the meat patties to the other side every minute. This method helps retain moisture in the minced meat and reduces the time it takes to fry the meat. On average, it took 10 minutes to cook the cutlets.

While the cutlets are frying, cut the buns in half horizontally. Place each bun on a separate plate, after which we grease the halves with a thin layer of mayonnaise and mustard. When the cutlets are fried, remove them directly onto the bun.

Place a thin piece of cheese on top of the meat, maybe a spicy variety. I have soft cheese, similar to cottage cheese. If it’s for children, it’s even better!

Cover the cheese with two slices of tomatoes. I have persimmon.

A real burger is far from fast food. This is a dish with its own canons, where there is considerable scope for culinary imagination. Follow these guidelines and your burgers will be perfect.

  1. Cook only from fresh meat. Marbled beef is best suited for a burger, but other types of meat can be used. It is only important to maintain the ratio: 80% meat to 20% fat (800 grams of meat - 200 grams of fat).

The main thing is that the cutlet is no thicker than one and a half centimeters and weighs about 200 grams. And don't forget to make a well in the center!
  5. Try to keep the burger patties slightly larger than the buns. Then the meat is fried to the desired size.
  6. Keep the cutlets in the refrigerator while you prepare the sauce and chop the remaining ingredients. In the heat, the fat in the minced meat will begin to melt faster than it ends up on the grill, which means the burger will turn out dry.
  7. Salt the burger patties only before frying. If you add salt directly to the minced meat, sodium chloride will begin to break down the protein bonds, and the meat will acquire a dense texture, similar to sausage. The burger won't be juicy.
  8. Don't turn the cutlets too often. The less you touch them, the juicier they turn out. First sear the meat in a direct heat area, then move it to the edge of the grill. While frying, lightly press down the cutlet with a spatula. For medium-roasting, six minutes is enough. Readiness can be determined with a special thermometer: the temperature inside the cutlet should be at least 70 °C.
  9. Collect correctly. First the sauce (on both halves of the bun), then the lettuce (on the lower, smaller half) and finally the cutlet. This way the bread will not get soggy ahead of time.
  10. Put down your knife and fork and eat your burger with your hands! With both hands. Press it down well, turn it upside down (this way the contents won’t fall out) and enjoy the deliciousness with a juicy cutlet.
